How can I change category?

Hi, I installed AIR Theme on my FTP. I think AIR is best one for my wepsite.
But i have two questions for setting.

1. How can I change category(to where on admin)? I founded small design studio last month. There are menu Branding, Illustration, Logo, Packaging… on The demo. But I’m desiging Brand, Poster, Character, Book cover. I Don’t know How can I change that for my works.

2. I want to set by Start with slider main(home 4). but the showing image’s width is very long. Can I fix by pixel size?
